Review: I'm new to baking with coconut flour and wasn't thrilled with the results. After reading this book, I can see why the recipes I tried weren't anything to write home about!

I'm anxious to try some of the recipes in this book, and I'm very happy many of them don't have quite as many eggs. I love eggs, but my cholesterol does not.

Review: The book is written well and a few of the recipes seem interesting. The thing is, recipes made with coconut flour just don't tastes like we're used to. Once we get passed that disappointment, maybe these recipes seem better.

Review: The recipes are tested in the authors collection of thrift store baking dishes. the author refuses to use the wide variety of natural flours, gums like xanthan and even baking powder(which comes in aluminum free types ) and avoids dairy. Eggs and lots of coconut oil are used. Lots of conversions are given but there's no betting that they are tested in any useful way. A loaf of bread containing a dozen eggs is not a bread, it's a dry omelet. High cholesterol(lots of eggs), high saturated fat (coconut oil) aren't switched out and tested for healthier and more interesting ingredients. Great recipes if you love the taste of browned eggs and oil. My doctor would never approve these recipes either. I love coconut flour and there are better cook books for it.

Review: Some of the recipes turned out OK but others flopped. Part of the problem is simply the inherent difficulty of working with coconut flour, which absorbs far more liquid than traditional grain-based flours (except oat flour, which also sucks up the liquids). Most of the the items I prepared didn't have as good a texture as items prepared with traditional flours, but for folks needing to avoid gluten, the trade-off might be worth it.

Review: This is a helpful publication in that it clearly sets out the steps to take after defining the differences between coconut flour and wheat flour, thereby eliminating most possibilities for error. I've made several of the recipes and had good luck with all of them. Also, it explains how to modify old favorite recipes by substituting ingredients. It's a very helpful little book.
